About the Recipe

An easy way to preserve delicious summer fruit. You can use a combination of different stone fruits like peaches, plums, nectarines and cherries and add whatever berries you might have around. You can also just use one fruit and let its flavor shine through!

Ingredients

2 ripe peaches, cut into pieces

2 pints blueberries

Handful of cherries

1 tablespoon sugar (here I used maple sugar for a bit of twist)

1/4 cup water

Preparation

Preheat oven to 400 F. Place all the ingredients in a 9 x 13 glass or ceramic baking dish and roast of 20 minutes, mixing halfway through. Let cool and store in the refrigerator for one week or freeze for up to 3 months in single serving containers for easier defrosting!
