About the Recipe

Grain free granola is a great option when avoiding oats or other grains. It is also a nice way to mix up the granola routine, and it is so easy to put together. Use 1/2 cup with your favorite yogurt (either dairy or plant-based) with some fresh fruit for a filling and healthy breakfast or snack.

Ingredients

1 cup chopped raw almonds

1 cup chopped raw cashews

1 cup chopped unsweetened coconut flakes

1/2 cup raw pumpkin seeds

1/2 cup raw sunflower seeds

1/3 cup honey

1/4 cup unrefined coconut oil

2 teaspoons ground cinnamon

Pinch of sea salt

1 teaspoon pure vanilla extract

Preparation

  1. Preheat oven to 350 F, line a large rimmed baking sheet with parchment paper.

  2. Mix nuts, coconut flakes and seeds in a large bowl.

  3. In a small saucepan, over medium heat, melt coconut oil, with cinnamon and salt (about 3-5 minutes). Remove from heat and add in vanilla.

  4. Pour mixture over nuts, seeds and coconut, and mix well. Then spread granola evenly onto the baking sheet.

  5. Bake for 10-12 minutes, or until the granola starts to turn golden. Remove the baking sheet from the oven and carefully use a fork to mix the edges in toward the center and the center out toward the edges. Return the pan to oven and bake another 10-12 minutes until evenly browned.

  6. Remove pan from oven and let cool completely. Store in an airtight glass container at room temperature for up to 2 weeks.
